Ezay means "pickle," and "Nyergum" means “twenty-nine." Hence, according to this tentative etymology, one could suppose there are twenty-nine ingredients in this dish. In reality, however, only nine ingredients are in this recipe. The ingredients are:Fried dried red chili,Peppermint ,Tomato,Coriander,Spring onion,Ginger,Sichuan,Peppers and Salt.No one knows exactly why this pickle is called “Ezay Nyergum.” This Ezay is considered to be an exquisite dish. A key advice on how to prepare this dish is to only add salt when everything is ready to serve.
